Food Supplies:
Any food that is consumed
on the premise MUST come from an approved source:
Any food means precooked foods or food/ingredients to be cooked such as fish, poultry, beef, vegetables, etc.
Food that is being served to the public must not be prepared at home.
When using store bought food:
Purchase refrigerated or frozen items after selecting your non-perishables.
Never choose meat or poultry in packaging that is torn or leaking.
Do not buy food past "Sell-By," "Use-By," or other expiration dates.
Put raw meat and poultry into a plastic bag so meat juices will not cross-contaminate ready-to-eat food or food that is eaten raw, such as vegetables or fruit.
Sampling:
Is discouraged, as there is a tendency to use your hands to pick up a
particularly juicy piece.
Not everyone is entitled to sample the food, including the food servers. The more
people who sample the greater the chance of contamination.
