About the Chefs

 


Executive Chef | Shane Lynch


Prior to joining FAU Dining Services and Chartwells Higher Education in August 2015, your Campus Executive Chef, Shane Lynch, 
was a traveling Executive Chef for TouchPoint specializing in new business strategies for nearly two years. He currently holds nearly twenty years of experience with quite a diverse background. Before joining Compass Group, Shane owned a restaurant in Jakarta, Indonesia named Nouvelle, known for its fine dining of French and Japanese cuisine. Prior to living in Indonesia, Shane was a Lead Chef at Quay Restaurant in Sydney, Australia (which is currently ranked within the top fifty restaurants worldwide). Chef Shane also holds experience as a Private Estate Chef throughout both Australia and New Zealand. Prior to leaving the United States, Shane was the Campus Executive Chef for the University of Puget Sound in Tacoma, Washington.

Shane studied at the Culinary Institute of America in Hyde Park, New York. He earned his A.O.S. in Culinary Arts and B.P.S. in Hospitality Management.  His favorite dish to create is his Javanese Sea Bass with Wakame White Onions & Dashi Pearls. Aside from traveling during his personal time, Shane enjoys participating in active sports including surfing, kayaking, scuba diving, and mountain biking.
